Tuna Veggie Rice Balls

So, since two days ago, my daughter had been refusing to eat proper meals and only preferred to have fruit, specifically Blueberries.

She had been so fond of 🫐 blueberries these days, and she would like to eat it from breakfast till dinner. We tried making her some pasta, french toast, and even her favourite pancakes. But she just had a few bites and still went back to blueberries.

We tried giving her some fruit as well, and she would eat a few bites, and then all went to the floor. (We are still in the process of teaching her not to throw her food. It has improved, but on certain days, some food still goes to the floor.)

So today, I decided to make these rice balls, which hopefully she would like.

This is just so easy to make, and it won’t take so much time.

Ingredients:

  • 1 cup of cooked rice
  • 1 can tuna
  • Mixed vegetables: carrots, beans, corn, peas ( I prefer to use frozen ones as they are readily available anytime in my fridge, and they don’t spoil easily)
  • 1 egg
  • Onion
  • 1 piece of nori

How to make…

  • Put the mixed vegetables in the blender and blend until they have become partly minced. Do not over blend as they won’t have anymore texture.
  • In your pan, put a little bit of oil, then put the minced onion and cook until translucent. Then, add the blended mixed vegetables. Cook for 1 minute.
  • Next, add your canned tuna. Make sure you drain the water before mixing it in. Cook until fully mixed with the vegetables.
  • Add your cooked rice and mixed all together. Cook for 1-2 minutes.
  • Put your rice mixture in the side of the pan. Then, on the empty space, put a little bit of oil, then fry the egg while mixing the yold and the egg white.
  • Once the egg has been slightly cooked, mixed it together with the rice mixture.
  • Cook for a few minutes till the egg is cooked. Turn off the fire. Then add crushed nori and mix together.
  • Wait until it has cooled down a bit before you make your rice balls by shaping it with your hands.
  • Serve.
