Dairy Free Creamy Spinach Pesto

I mentioned previously that my daughter has CMPA and although we have started the milk ladder. We still keep coming back to the step 3 and 4 of the ladder.

Because of her CMPA, we need to be careful with what she eats or else she will have rashes, swollen eyes or either diarrhea or constipation the next day.

Making food for a picky toddler with CMPA also needs much effort. Specially for my daughter who likes her food different everytime or else she would just play with it. We are also trying to address this by the way and we are still in the process of teaching her not to play with her food.

And because of that, me and my husband always try to find new recipe or tweak some recipe for it to be suited for her.

So we tried making this Dairy free creamy pesto for her because when we went to the store we had a hard time looking for dairy free pesto.

We decided to make this pesto’s main ingredients, the spinach and basil, can be a good source of multiple vitamins and minerals, iron and it is good for the gut. When we first tried giving her this food, it did help her constipation at that time.

So I hope you would also like this recipe.

What you need…

  • 1 small bowl of baby spinach
  • 2-3 stems of basil leaves
  • 2 table spoon pine nuts
  • 1 cheese ( babybel plant base cheese)
  • pinch of black pepper
  • 1 table spoon lemon juice
  • 1/2 tablespoon olive oil
  • 1/2 tablespoon water

How you make it…

1. Prepare all your ingredients and wash all your leaves.

2.Remove the leaves of the basil and wash them as well.

3. Put your leaves inside the blender.

4. Then add your pine nuts.

5. Next, add your cheese. I did use plant based babybel but you can use other plant base cheese as well.

6. Add a pinch of black pepper. Noticed that I did not add any salt as the cheese is already a bit salty. Also, salt should be moderate or not added to babies food at all.

7. Then add your lemon juice.

8. Then start blending everything. It will be a bit difficult to blend at first as there is not enough liquid.

9. You can add the olive oil and the water.

10. Then keep blending until smooth.

In the video I added here… I was not able to add olive oil as we run out of it. But having just water is also fine.
